Sorry I did a search, can't seem to find the answer.
I have a license for UCCNC to run my Grizzly G0704, I've been using it as a mill but I have a need for Mill Turning.
Where do I find the Turn Software from UCCNC?

Another question is: Is there and easy way to configure the axis to comply with a lathe setup? or is it just easier to swap the plugs?

UCCNC turn is only available in the latest development release 1.2116, you can download it from here: viewtopic.php?f=2&t=240&start=50

I don't understand your other question, please explain.

I have a mill setup with uccnc software so the z would be used instead of the X axis and X axis would be used instead on the Y axis.

You could make 2 separate profile files for the 2 different setup.
